Crispy Fried Apple Dumplings

Sometimes you need quick, joyous, comfort food. This is a great warm and cozy dish that I find pretty easy to prepare. I used apples because that's the fruit I had on hand but I've also done this dish with bananas and nectarines. You can use any fruit or berries that tickle your fancy!

 

 Whatever fresh fruit you have on hand will be added to your batter. I used fresh apples.

 

Fresh Fruit Filling

 

2 medium apples, peeled, cored and diced

1 tsp cinnamon

1 tbsp brown sugar

1 tbsp butter

2 tbsp fresh lemon juice

 

Add all ingredients into stockpot and cook over medium heat until the liquid from the juice is totally reduced and absorbed into the fruit. Let the mixture cool before folding into the batter.

Do not cook bananas if you choose to use them. Smash them with all of the above ingredients except butter and then fold into batter.

 

This simple sweet batter can be used to make several types of fried or baked cake puffs. It's basically a thick pancake batter.

 

Dumpling Batter

 

1-1/2 cups all purpose flour

1/2 cup granulated sugar

1/2 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 tsp cinnamon

1/2 tsp nutmeg

1 tsp vanilla extract

2 eggs

1/3 cup milk

*optional 1 tbsp citrus marmalade

 

In a large mixing bowl, mix all dry ingredients except sugar. In a separate bowl whisk together eggs, sugar and vanilla. Add to dry ingredients and stir in slowly adding the milk. Only add enough to create a very thick pancake type consistency. If you choose to use marmalade, fold in with your fruit mixture.

 

 

Use a deep frying pan and fill half way with a good vegetable or grain oil for frying and bring to a medium high heat. Prepare a dish with paper towels for draining the dumplings as they come from the oil.

 

Using a large spoon or an ice cream scoop, drop dollops of the batter into the oil. The dumplings will float when it's time to flip them over. Cook until dark golden brown and then place onto the towel lined dish.

 

 

 Using a sifter or a sugar shaker, sprinkle the dumplings with confectioners sugar or you can leave them as they are. If you use the sugar, let them cool for 5-10 minutes before the sprinkle.

 

Then enjoy them with coffee, hot cocoa or a lovely chai tea. Now, go eat!!
