Pappardelle with Shrimp, Sweet Potato, Leeks, Garlic & Spicy Plum Tomato Sauce (photos & des

Sometimes you have to get creative with what you have. The weather has been terrible. I used some goodies I had available to make a tasty dish.

I used 1/2 sweet potato, cut into sticks, half of a bulb of garlic, sliced thinly, 1/2 leek cut into sliced, 4 plum tomatoes, quartered and a tablespoon of good quality tomato paste. I sautéed this mixture in a mix of olive oil and homemade spicy chili oil until the sweet potatoes become tender.

When the sweet potatoes are just fork tender I added 10 nice sized, deveined shrimp, turn off the heat and cover while the shrimp is cooked by the steam. Prepare any pasta you have on hand.

Once the shrimp are cooked I shaved in a bit of Parmesan to thicken the mixture.

Plate and eat it with your mouth!!
